Dress up this drink by dipping the rims of martini glasses in pasteurized egg whites and then in shredded coconut. It was perfectly tropical and incredibly festive. It might be what my friend likes to call a “girly drink,” but he still drank it all! 🙂

Coconut Blue Hawaiian

Ingredients
  1. 1 cup pineapple juice
  2. 1/2 cup (4 ounces) light rum, if desired
  3. 1/2 cup (4 ounces) blue curaçao
  4. 1/2 cup (4 ounces) cream of coconut (not coconut milk)
  5. 10 to 12 ice cubes
  6. Fresh cherries or maraschino cherries with stems, if desired
Instructions
  1. Chill martini glasses in freezer several hours before serving.
  2. Place all ingredients except cherries in blender. Cover and blend on high speed about 45 seconds or until smooth.
  3. Pour pineapple mixture into glasses. Garnish with cherry.
